CHOC CHIP BANANA BREAD

Details 

Ingredients:

344g very ripe bananas (which equates to x3 large bananas)

87g coconut flour

5 eggs 

50g honey (or sweetener of your choice)

1g ground cinnamon

1 tspn baking soda

1tspn baking powder

1/4 tspn salt

1 tspn vanilla extract

1/2 cup Noshu choc chips

1 scoop Uncensored Supplements vanilla protein powder

 

Method:

Pre heat oven to 180 degrees and line your loaf tray with baking paper, or use silicone tray for non stick effect without greasing.

In a mixing bowl, mash bananas with a fork (you can microwave them to soften them first if needed) then add the coconut flour, protein powder, eggs, honey, cinnamon, baking soda, baking powder, salt and vanilla extract, adding the choc chips last. You can use a whisk or fork to stir the batter well, try to break up all the clumps so a smooth batter is formed.

Pour batter into loaf tray and set timer for 45-55 minutes or until centre of loaf is firm to touch. Time can vary but this particular load in this size tray took 45 minutes.

Once ready, remove from tray to let cool, then cut into 10 servings. We recommend serving your banana bread warm with a little smear of butter (FYI - butter serving suggestion not included in macros below).
